Will eating a lot of kale prevent me from getting cataracts?
A study published in JAMA Ophthalmology found an association between a high vitamin K diet and reduced cataract formation.
The study included almost 6000 elderly patients from a Mediterranean population. The patients were followed for over 5 years and each year they were asked to complete a food frequency questionnaire which estimated their daily intake of vitamin K.
The summary?
The authors found that patients with higher vitamin K intakes were less likely to have cataracts and undergo cataract surgery.
Why is that?
The hypothesis is that it’s due to the anti-inflammatory and antioxidant properties of vitamin K.
